IMG_2851This is a paleo version of a breakfast classic. You will need a waffle maker but all other ingredients are store cupboard staples. You can also leave out the blueberries if you are not a fan.

Ingredients for 4-6:

  • 3 large eggs at room temperature
  • 1/2 cup coconut milk
  • 3 tbs maple syrup
  • 3 tbs melted coconut oil
  • 1/2 tsp pure vanilla extract
  • 1 cup raw cashews
  • 3 tbs coconut flour
  • 1 tsp baking soda
  • 1/2 cup blueberries
  • pinch of salt


  • Preheat waffle iron.
  • Place all ingredients in a blender in the order listed, except for the blueberries.
  • Blend on low for 30 seconds then increase to high for a few minutes until smooth.
  • Spoon batter onto waffle iron and scatter the top with blueberries.
  • Cook according to waffle iron instructions.
